Create a signature cure for your own air-dried bacon this year, and dress your sprouts, scrambled eggs or turkey with the most delicious pancetta-style British bacon, unique to your table.

Unleash your master flavour creator, and combine a range of delicious curing herbs, fruits and spices to create sumptuous air-dried bacon to wow your guests.

Here's how it works:

  1. You choose the quantity, finish and presentation of bacon you'd like to create and add to your basket.
  2. You blend herbs, spices and fruits to create the perfect signature bacon for your Christmas sprouts, scrambled eggs and bacon rolls. Pick from the house blends below, or design from scratch from the ingredients listed below.
  3. Go to the basket and tell us the your chosen blend or ingredients in the Order Notes. Then checkout.
  4. We start with the belly cut of traditional breed British pork, from the country’s finest herd of Middle White pigs, usually reserved for Michelin-starred restaurants.
  5. We prepare your bacon, applying just the right amount of cure for the right amount of time, then air-drying your cut to perfect and concentrate the flavour.
  6. The perfect air drying takes a couple of months - usually around 8 weeks. There's natural variation in the meat, so it varies slightly each time and could be slightly shorter or slightly longer.
  7. When your air-dried bacon is perfectly ready, we’ll deliver it to your door, sliced, diced, rolled or whole, as you specified.

Your bacon is cured and will be vacuum packed so it's suitable to keep the cupboard, fridge or freezer until it's opened. Refrigerate after opening.

To speed things up we've created a few house blends which you can select or customise. Of course, you can skip these and choose from the full range of ingredients below.

  • Iberian Cure - Smoked paprika, garlic, oregano, black pepper, maple syrup
  • Fragrant Cure - Cardamom, bay, star anise, brown sugar, gin
  • Christmas Cure - Cinnamon, clove, ginger, Pedro Ximinez, orange bitters, cranberry and brown sugar
  • Garden Cure - Rosemary, sage, thyme, black pepper, brown sugar
  • Sweet Spiced Cure - Five spice, fennel, black pepper, treacle
  • Eastern Cure - Garlic, five spice, cumin, Szechuan pepper, brown sugar
