"A lovely filled salami with a great shape. The salami had texture and each mouthful had different elements. The seasoning was perfect allowing the pork, cheese and wine flavours to come through. The judges felt the finish was delicious".
"Nicely formed, evenly cured, coarsely textured salami, deeply savoury - the cheese is an inspired addition - with a pleasing winey acidity and lift. The pepper is resonant, the salinity sound. The overall flavour is quite youthful, but also juicy".
The 200g whole salami's about 30cm long and 5cm wide and can be cut at home with a sharp knife.
