The Makers' Inspiration
A quest to curate the best of Berkshire, and highlight the produce of our friends and neighbours. We simplified the cure to make room for the combination of local wine and cheese which defines the Berkshire Salami.
How We Make It
A classic salami based is given a good drink of local red wine, and copious quantities of coarsely cut Heckfield cheese. Elbow grease is applied to bring it all together, before it's aged for a couple of months.

"A lovely filled salami with a great shape. The salami had texture and each mouthful had different elements. The seasoning was perfect allowing the pork, cheese and wine flavours to come through. The judges felt the finish was delicious".
"Nicely formed, evenly cured, coarsely textured salami, deeply savoury - the cheese is an inspired addition - with a pleasing winey acidity and lift. The pepper is resonant, the salinity sound. The overall flavour is quite youthful, but also juicy".
