Who's Smokin' Joe?

Well, he's wooden, big around the middle, immobile and he smokes like a chimney. Actually, he smokes with a chimney, because Smokin' Joe is the Bray Cured meat smoker.

Smokin' Joe is a massive, converted whisky barrel, into which we pipe natural wood smoke to imbue some of our products with his irresistible flavour.

We're going to write up a full blog on the making of Smokin' Joe, which as I'm pretty lamentable with DIY, was far more of a mission than it ought to have been. Got there in the end though.
