The Aperitif Files - Orange
The sweet citrus of orange runs through this aperitif from top to bottom. From the salami, where the rich gamey flavours of venison are brightened by its zest, to the vibrancy it gives an otherwise brooding Rum Old Fashioned. Rum is a flavour bridge too, with the Venison Old Fashioned showcasing aged rum from Griffiths Brothers of Penn. Bright, juicy olives love the salty savouriness of the salami, with zingy cardamom another perfect partner.
