The Fennel Salami Project

Make Your Own Salami

Your mission, should you choose to accept it, is to use this kit to produce your very own fennel salami or saucissons.

This project will yield exceptional homemade fennel salami. Using a recipe designed by our Head Charcutier Alex, which you can customise too, to make it your own. Decide whether to produce a couple of large slicing salami, or a few style saucisson products. Whichever way you want to go, you'll have what you need in the project box.

You just need to decide how much salami you'd like to make, and whether you'll be sourcing the meat separately, or having some from our private stash.

The 2.5kg version of this project will make two large salamis or five saucissons, while the 5kg version will make four large salamis or ten saucissons.

What's Included?

• Recipe card and instructions, for you to follow or adapt
• Natural casings for 2.5kgs or 5kgs of saucissons
• Synthetic casings for 2.5kgs or 5kgs of salami
• Salami seasoning and cure for 2.5kgs or 5kgs of fennel salami mix
• Stainless steel hook(s) to hang the salami from
• Delicious pork trim from our private stash, for 2.5kgs or 5kgs of salami (or select 'Without Meat' and supply your own)

What's Not Included?

• A cupboard full of excess ingredients you'll never use up.
  

What Equipment is Needed?

• Mincer or grinder for the meat (if you don't have a mincer, let us know in your order notes and we can mince the meat for you, though we will then supply it frozen for freshness)
• Stuffer and nozzle for filling the salami or saucissons

• Sulphites from the wine.
