The Makers' Inspiration
Hogget, sheep in its second year, offers more depth of flavor compared to lamb. This richness reflects a longer life and better grazing conditions. Its robustness provides an excellent foundation for charcuterie, allowing for a broader spectrum of flavors compared to milder meats. This led us to create a boldly spiced chorizo, incorporating hints of the flower meadow to achieve a balanced profile.
How We Make It
