The Makers' Inspiration
No self-respecting charcutier can resist the allure of fennel salami. We knew we had to have one, but did patiently wait a year before developing this version, which has been with us ever since.
How We Make It
Our classic salami combines heritage breed pork and local wine with just a hint of fennel. This subtle addition enhances the sweetness of the pork, which develops as the salami ferments and dries over several months.
Tasting Notes
Light, fresh, and creamy with a hint of herb and spice from the cure, it excels in various dishes, from eggs benedict to wrapping spears of asparagus.
