Butchery & Charcuterie Course FAQs

At our charcuterie factory: Bray Cured, Taplow Common Road, Burnham, Berkshire, SL1 8FL. We’re easily reached by car from all over the country, being close to the M40 and M4 and M25.

From London or Reading, we're a 5 minute taxi journey from Taplow or Burnham station on the TfL Elizabeth line.

If you're travelling by national rail, we're about a 10-15 minute taxi ride from Maidenhead or Slough. Ubers are usually available.

  • You’ll typically with a coffee and charcuterie canapés.
  • You’ll get a tour of the butchery and our charcuterie-making factory, with a full explanation of how the whole process works from our award-winning charcutiers and butchers.
  • You’ll get hands-on in the butchery to cut, create and season your own charcuterie creations under our expert guidance. Learn techniques to create the right cuts, delicious flavours, tasty meat-to-fat ratios, and safe cures so you can do it again at home.
  • If your course involves sausage or salami making, you’ll get to use our professional sausage stuffer and learn how to do it in your kitchen too.
  • Rounding off with a light lunch of English wine charcuterie tasting from our varied range of cured meats, you’ll discover the differences between the salamis and cured meats, and maybe you’ll also taste something you’ve prepared fresh that very morning.

We run courses on Fridays and Saturdays, usually starting around 9.30am. Half day courses last up to 4 hours and full day courses up to 7 hours. We typically run charcuterie courses weekly, and each type of butchery course at least once a month.

No, we provide everything you need. We offer an optional gift purchase of a Bray Cured apron and professional butcher’s knife to give alongside the course you’re gifting so they will be kitted out for the day and to continue their charcuterie at home afterwards.

You’ll always have some goodies to take home. What they are depends on the course and is explained on each course product page but could include sausages, cured duck ham, pâte or a joint to roast.

If you’ve made salami, we’ll ferment, hang and air-dry it for you in our climate-controlled rooms until it’s finished and ready to post out to you.

You’ll be in a small group of, usually, 6 to 12 people so there’s it’s a great opportunity to learn and ask questions.

If you've bought a Charcuterie and Golf Experience, the gift recipient will receive instructions asking them to contact us and we make the appropriate arrangements with the golf club, which is next door to us, or less than 1 minute drive.

All our gift cards are valid for a year. That just means that you have to use the value of your gift card, start your subscription or book a place on a course before the expiry date. You don’t have to have physically attended the course before the expiry date - just have booked a place.

Once you click on the button to add the recipient details, you can add the delivery email address, a personalised message, and choose a delivery date - either immediately or schedule for a future date. Then checkout as normal, and the email will be on it’s way. Each e-gift card looks like an image of a real gift card, showing what you’re giving. The email contains details of how the recipient can redeem their gift.
