All our courses include

  • The sights and smells of the charcuterie - a tour of Bray Cured HQ, 5 mins taxi from Taplow or Burnham station (Elizabeth line)
  • Get hands-on and make a variety of meat and charcuterie with our experts
  • Take away and enjoy what you make, ready to do it again at home
  • A warm welcome with coffee and canapés
  • Charcuterie tasting lunches prepared while you work

What they'll learn on this course

  • The course will last around half a day
  • You'll be learning both whole muscle charcuterie (e.g. bacon, prosciutto, coppa, bresaola) and salami making, the two key charcuterie techniques
  • Learn the techniques from our Master Butcher and Master Charcutier
  • Prepare a joint for whole muscle cure and cure it yourself - could be bacon, ham, lomo, coppa, bresaola or something else!
  • Produce your own signature salami
  • Take away your whole muscle cure to finish at home, or leave it with us to mature alongside your salami, which we'll ship to you when perfect.
  • Receive your own home curing kit ready to make your next project at your place.

Product Handling
  • Charcuterie travels at room temperature - safe if you're out when delivered
  • Cheese ships overnight with ice packs - must be received and refrigerated immediately

  • 14-day return policy from delivery date Items must be unopened, undamaged, in original packaging
  • A return fee is deducted from refunds to cover return shipping (£4) and outbound shipping (£4) if a free shipping offer was used
