What they'll learn on this course

• The course will last around half a day
• Learn how to butcher a beef hindquarter, working with our Master Butcher - this is where a lot of the good stuff is, including rump, fillet and sirloin.
• See how we break down the beef for charcuterie, roasting and steaks
• Develop your butchery skills with hands-on learning
• Tie and marinade or dry rub prime cuts for frying and roasting
• Prepare your own sausages from scratch
• Learn and use different curing techniques from our Master Charcutier
• Make your own beef charcuterie, perhaps bresaola or salami
• Take away charcuterie samples of what you've made to share
• While you'll take away your perfectly butchered beef and professional-looking sausages on the day, ready to cook and enjoy at home.
