Lamb charcuterie is taking off. With great quality lamb available throughout the UK, this makes a lot of sense. Bray Cured uses local Marlow or Ryeland lamb aged to 2 years, and at that age, known as hogget, for a richer flavour (not as strong as mutton). From delicious lamb salami to our spicy lamb chorizo, each of our cured lamb selections offers a truly exceptional flavour with spices thoughtfully paired to complement the meat.
